Makes 4 small-med burritos
  • 3 small white potatoes
  • 1/2 onion
  • 1/2 green pepper
  • knob of sharp cheddar
  • few spoonfuls salsa
  • 1/4-1/3 ib chorizo
  • 6 eggs
  • 4 tortilla
  • few tablespoons of oil
  • hot sauce
  • fresh diced tomato (optional)
  • sour cream (optional)
Works best with 2 burner coleman stove, cast iron pan and a pot, and 1 spatula.
slice thinly the potatoes and chop up. fry a bit with some oil, then after a bit add the onion and green pepper. cook for 10 mins or so till done, remove from pan and keep warm in bowl. mix w salt (2 packs of in-n-out salt worth) and pepper if you have it. Chop up cheddar while cooking.
Add chorizo to pan w bit of oil, cook and chop up. crack all the 6 eggs into chorizo and scramble and cook till done. put in other bowl and keep warm.
assemble in tortilla, wrap and fry in the cast iron pan w a bit of oil, tunr once after browning and crunchy. this is the most important step.
